This citrusy strawberry sauce is a lovely option to liven up vegan desserts, especially chocolate or banana-flavored ones. It looks so pretty—chunks of tender stewed fruit suspended in a ruby-red syrupy base—and smells gorgeous too! Imagine the fresh, citrusy tones of orange mingling with the sweet, fruity aroma of strawberries! Yess! I kid you not; the entire kitchen smells heavenly while this sauce is cooking… Mmm 🙂
Serve this sauce with banana nice cream or any vegan ice cream and top with roasted nuts for a quick n easy sundae! You can also serve it with some vegan ganache for a decadent dessert. Or blend with some soy/cashew/coconut curd and frozen bananas to make a delicious smoothie!
It’s very flavourful as it is; however, you can add cinnamon, elaichi, grated ginger, or a few drops of vanilla essence for added flavor if you wish so.
Preparation time: 10 minutes + macerating time
Yields: around 1.5 cups
1 cup = 150 ml
Ingredients:
- 2 cups coarsely chopped strawberries, tightly packed
- 1 cup orange segments (deseeded, fibers removed)
- 2/3 cup sugar
- 1 pinch of salt
Method:
- Mix together all the ingredients in a bowl and refrigerate overnight. The fruits will release a lot of water.
- Cook the fruit mixture over medium heat for around 5-7 minutes, stirring occasionally, until the juice turns syrupy. Lightly mash the cooked fruit with the back of a spoon. Serve warm.
Stays good refrigerated for up to two weeks in an airtight container.
